 4 White Celery Stalks
 Walnuts kernels
 Parmesan Cheese
 Extra virgin olive oil
 Balsamic vinegar

Divide them in half and remove the inner hair. Then cut them into very thin slices, putting them gradually in water acidulated with lemon juice, so as not to blacken them.

Remove the hardest strands of celery and also cut into thin slices.

Dry the artichokes well and put them in a bowl with the celery.
