Savory cream tart

The savory cream tart is a clear reinterpretation of the well-known dessert decorated with flowers and macarons that has depopulated on social media.

Equally scenic compared to its homonymous dessert, this recipe is extremely simple in its realization and absolutely customizable, a basic savory pastry and a filling of mascarpone and spices, for the green light decorated with colored vegetables, aromatic herbs and their flowers, such as in the case of rosemary or chives.

A dish that shows off at the center of the most important launches, to be customized in the shape of the pastry, overlapping discs, but also letters, numbers, there is really no limit, exactly as in its sweet version with the pastry or with sponge cake.

For the salted pastry

  • 200 g 00 flour
  • 125 g Butter
  • 20 g Grated Parmesan
  • 25 g Potato starch
  • 1 egg yolk
  • 1 egg
  • salt

For the filling

  • 200 g Mascarpone
  • 200 g Semi-whipped cream
  • 50 g Grated cheese
  • 1 teaspoon sweet paprika
  • 1 teaspoon Curry
  • 4 sheets of Glue

For decoration

  • carrots
  • Olive
  • Chives


To prepare the cream tart recipe in a bowl mix all the ingredients together, transfer the dough onto a pastry board, and continue working until you get a smooth and homogeneous dough.

Leave to rest for 30 minutes.

After the rest time, resume the dough, roll it out and cut the shapes that will make up your cream tart: one shape for the base and one will be placed on the first filling.

Place the pastry bases on a baking sheet and bake at 160 degrees for 15 minutes.

In a bowl put the mascarpone with 150 g of semi-whipped cream, add the spices, cheese, and whip to obtain a soft cream.

In the meantime, soak the gelatine and dissolve it in 50 g of slightly heated cream, add it to the mascarpone cream.

On a serving plate, place the first disc of salted shortcrust pastry and decorate it with cream spikes.

Place the second shortbread on the cream. Lay the shortbread on the cream.

Complete the tart with the second round of cream spikes and decorate as desired.
