Sea bass fillet in potato crust is a light and tasty second course, an alternative way of preparing the definitely spectacular sea bass.

- 2 fillets fresh sea bass
- 2 potatoes
- 1 sprig of fresh rosemary
- Extra virgin olive oil
- Salt and pepper
To prepare the recipe for sea bass fillet in a potato crust peel the potatoes and slice them very thin with a mandolin.
Line a baking tray with parchment paper, arrange the sea bass fillets, season them with a drizzle of extra virgin olive oil, a pinch of salt and a little pepper and cover them with the sliced potatoes.
Season with oil, salt, pepper, and rosemary and bake in a preheated oven at 200 °C for about 20 minutes.
Let the potatoes brown under the grill if necessary for a couple of minutes. Serve and serve.
